Soaked overnight in buttermilk, the lactic acid would have a tenderizing effect on not only the chicken, but the skin as well.  Not a bad idea, Pappy!

Did you cook those skin-side-down?  It does look like it was cooked over charcoal!


Very inspiring! Me thinks I'll have to play around with this idea.

Play on Tent! Adds a little "tang" to the meat as well. It was actually cooked skin side up.....nobody more surprised when I opened the lid then me ;)

I took the higher temp suggestion from you sir.....was a good one
