I had the rear half of a chicken plus some breast meat and a wing to debone and make some chicken salad for our supper tonight. I made wraps from the chicken salad and my sides were some Ohio nachos and Green Giant steamer veggies.

It was a busy day for me today. I had two small corned beef flats the marinated for pastrami overnight and wanted to get them on the smoker early. I had to wait until after the grandsons soccer game to get them on by 1:00 pm. They did get done just before supper time.

As soon as I got the pastrami on smoking I made up the chicken salad. I nuked the skin and had that and a couple of my pickled eggs for a lunch snack. The rest of the afternoon I trimmed in the back yard with my string trimmer. I kept an eye in the pastrami and sipped on a few beers.  I have a lot to trim with two sheds, the brick sidewalks, chain link fence, brick pad where my porch swing is under an arbor and a long flower bed.

About 5:00 the trimmer was out of string and I was out of energy so it was a good time to quit. The pastrami was done at 5:20 so got it wrapped and in a warm oven to rest. I had about a half hour rest before making supper. It was a good thing I had an easy and quick meal to prepare.

For the Ohio nachos I piled some Kettle cruncher potato chips on a plate, topped them with some shredded cheddar, micro planed parmesan cheese, and Penzey’s sandwich sprinkle.

 I heated my large carbon steel skillet to toast a tortilla and nuked the steamer veggies. I scorched the tortilla a little but used it. I used one of my wife’s large wraps, 12 inches; that made two nice wraps. I just piled 4 or 6 Tbs. of chicken salad in the middle, leaving a good inch on each end; rolled it up and folded over each end. I cut it in half for two wraps to serve.

I nuked the Ohio nachos for one minute and plated it up for the wife and me. It tasted pretty good; the cheesy crunchy nachos were good with the chicken wrap and the steamed veggies were an added touch.
That was a healthy meal; well I did use low fat cheese on the nachos!

With our bellies full we settled in to watch a movie and then I was off to bed!

I used his seasoning and just changed the cooking technique some from his ez pastrami. Going to slice it today. Don

Thanks Don, that looked good. I just got a rotisserie chicken at Sam's (at $4.88 it is cheaper than buying an uncooked chicken). I shredded it up and half is going into Brunswick Stew tonight and the other half may go into your chicken salad recipe later this week.
