Two frozen butts are better than one

I wanted to try cooking the butts frozen since seeing it on LTBBQ, and today is as good a day as any.


A couple of weeks/months back I got a couple of butts from Sams Club for $1.29/lb. They were already vacuumed sealed, so my thought was that I would keep them that way and not waste my bags. I was going to pull them frozen and re-seal one and cook the other. I was also going to try and re-use the bag they came in. Well, good thing we know how to change plans.

Lesson one: The bag is way too frail to try and use again.  No problem there, get plenty of the bags from Amazon.

Lesson two: Short of a jack hammer there was no way I was going to separate them two butts. So they are going on together.

Lesson three: Be glad you bought that food saver  :)


Went with molasses and bad Byron rub. 


In the smoker at around 8AM CDT. Smoker was around 200 but has dropped to 150 once the butts were placed in. I’ve gotten back to 180 and climbing.

Two hours and they are coming along nicely. I was almost able to pull them apart from each other. In about another hour I think will be able to pull them apart and put in the thermo. I noticed that I was getting some inconsistence reading on the chamber temp so I moved the probe away from the frozen meat and it appears to have settled down.

RAD I will be watching for your results. I have only done frozen butts in my pellet grill. Pellet grills use convection heating(fan) that helps move moisture from the chamber and has even heating top to bottom. I am curious to see the results when natural heat rises from the bottom. The question is will they defrost evenly.

After three hours I was able to separate the butts, and add the thermo. I am getting readings from 80-110 ish. It appears that some of the butts are still defrosting, the area closer to the place that the two were frozen together, which is expected. Now that they are apart let’s see if we can bring up the IT more consistent across the entire butt.

71/2 hours and one butt is steady at 180ish and the other 170ish.

I have a couple of two butt bags in my freezer, be interesting to see how this turns out.

1st one got pulled at 8 hours with an IT of 205. FTC while the 2nd one finishes. The other one is currently sitting at 165ish. Very testy with an outstanding bark on the 1st one out.
