Smoked Sweet Basil Italian Sausage

Got this from Cliff. Don’t know if it was from here or another board.

Used a pellet load I was wanting to try. BBQ Delight Savory Herb and Mak Hazelnut Blend. As it was coming to temp the smell made me want to bring the Mak in the house!

Took some Johnsonville Sweet Basil Italian Sausage and poked some holes into them with a sterilized needle. Onto the Mak on Smoke till a it of 150. This was after an hour.



At 150 bumped the Mak to 250 till they were at a it of  167. Saved one to try the rest into an ice bath.





Eating this one



Nice smoke ring



Yummm



Packaged the rest for later

Why ???

From what I read it was to keep them from steaming and fating out. I would guess it would also help with the smoke absorption. If you look at the pictures you can see they did not fat out. The ice bath also helped to keep the fat in for later use.
