What temp are you cooking at and what temp are you going pull?

it started out at close to 300° for around 30'mins
but has settled down to around 250° ever since

I don't know what temp to pull it - 185° ~ 195° ??

I pull them out at 195F to 200F internal temp.

When foiled the second half of the cook they take 5 to 5 1/2 hours from start to finish at 260F on the pellet grill. Going without foil will take longer. I have never done one without being foiled so I am very curious to see your results.

I do the toothpick test like I do for briskies....when the pick pulls out clean and easy that bad boy is done....foil rest and slice that sucker up and I will be right over ;)

Wow, that's a long time Capt?  Wonder why it took sooooooo long?

 Makes me want to try one now just to see if infrared will blow through the stall.

Looks really good Capt.

Like I was saying I have never attempted one without foiling the second half of the cook but I am shocked after 10 hours it never reached 190F or over! I may need to try one unfoiled and see what results I get...
