Foiling Butts?

I  just watch an older episode of Pitmasters and they were cooking ribs and butts.  The competitors did something I had not seen before (probably the only one here).  They foiled the ribs which I do, but then they finished off the Butt by foiling it and putting it back in the smoker.  they foiled it around 175 or so and then let it come up to 195 to 200.  They also pulled off the "money muscle" and finished it off separately to give it a bark all the way around.

Would y'all enlighten me on this as far as foiling and finishing a butt and doing the "money muscle"?

They probably took off the money muscle for slicing (which would require a lower internal temp for doneness) and then pulled (and possible chopped) the other parts when they hit the higher temp.  As for foiling, it is just to get it through the stall quicker.  Especially during comp cooking where time can be of the essence, getting the internal temp up quickly can be necessary (either by foiling or raising temp).

I don't like to foil meats (any) while smoking, but sometimes you have to do it...

I always foil butts. Double wrap at 165 with 1/2 cup of Lager and let it go to an IT 202.
I'm not a big bark fan, so this method works well for me.

I've always foiled butts.  It eliminates or seriously shortens the stall period and is great insurance for moist meat.  If done properly, it doesn't get in the way of good bark, either.

My likes an un-foiled bark, have to say so do I.

We like to cut off all the bark, chop it up and mix it back in.

Foil? We don't need no stinkin foil. ;D ;D

Unlike Shakespeare , Bogie never foiled. Neither do I. I tried it a couple of times but didn't like the resulting bark. Maybe I just wasn't doing it right.

What do you mean, Pilgrim? The Duke always foiled his pork butt and flavored it with a dose of bourbon to make it juicy.

Bogart had "Baby". He didn't need to foil his pork but.

I only foil if I'm short on time, but never just to save time.  With the SRG the meat stays moist spo no need to foil plus you end up with great bark  ;)

I'm a bark guy...will foil thru the stall if im pressed for time but usually just let it go.
