Mushroom and Roasted Red Pepper birdloaf..

3 pounds of 85/15 ground turkey, a jar of roasted red peppers (chopped), a pound of sliced mushrooms and a bunch of other stuff...   (including Annie's Garlic EVOO, Carolina Treet, Cavendish Greek seasoning, Goya Adobo, Green Tabasco, Mies Breading, and healthy shakes of Cajun Power garlic)



Slather on some more Carolina Treet for color and on the MAK at 245°.




2 hours and 20 minutes later...      (sigh)




Natives are getting restless.   Put the spurs to it and pull at the 3.5 hour mark.




Smoke ring!  (pardon the hack job)

I didn't have any eggs for a binder, so it didn't have the best consistency.  Still, it was very tasty!

And I'll probably go at a higher temperature next time..

Oh yeah, good stuff.   I make it different every time.  I just use whatever falls out of the cabinet when I open it..

Ground Turkey/Fresh Mushrooms/Roasted Red Peppers are the base.

I saw an 'egg-less' meatball recipe the other day that used smashed avocado as the binder.     Might be loaf-worthy..

I quit using eggs and bread crumbs several years ago.  I like the consistency and mouth feel of the resulting loaf a lot better with out them.
