Put a butt in my MES last night and took it off today. My wife said it was the best I've done and to remember what and how I did it. She wants me to do one for the next church dinner.
These are the three things I did : First I trimmed all the outside fat of the butt. One thing this did was to eliminate a lot of the grease that I sometimes get when pulling the pork. Second, I used a rub Tee gave me at the KOA Gathering. It had no name or anything on it. He just gave it to me and said, "Try this". Last, I used the injection liquid recipe Old Dave posted.
I really like smoking with the MES 'cause I'm lazy and like the "set and forget it'' aspect. I heated it to 225*, put some hickory chips in the Amazn Smoke Tube and some peach chips in the chute. Then all I had to do was to look out the back door and see if the smoke was coming out of the smoker. By the time the Amazn Tube burned out, I was fast asleep. Got up this morning and the butt was just right.
So, there is the way a lazy man does it.
