Need some Butt!

The meat



The glue and rub.



Ready for a few hours in the fridge



See ya about 3 in the morning!

Ok it's 3:30 time to cook. Butt on the Mak



Web control on



Hooked up and ready to roll

See ya in about 11 or 12 hours

Seven and a half hours in getting some good color



Made some Carolina slaw and deviled eggs. Topped the eggs with BPS Happy endings. Had some great looking avocados at the store so made up some Quac.

Lets plate.

Okay, Rick, I have a butt wrapped and in the fridge for tomorrow.  This one is 7.75 lb...I  covered it with EVOO for "stick 'em" and rub in some Texas rub from Aaron Franklin.  Equal parts pepper and salt with garlic powder, onion powder, and paprika for color..

I'm gonna smoke this in the offset with pecan wood for fuel and flavor.  If you wanna see what it looks like on the counter top, look at Ricks butt.  Before they're cooked, a butt's a butt.

Details to follow...

PLUS...I'll have details on the top round roast I'm cookin' tomorrow...kinda like Old Dave's.
