Does that meat look like it needs to be seared? You guys don't like a bourbon glaze made with my recipe of spices and Jack Daniels? If you don't like the bourbon glaze, pilgrim, you can always drink the bourbon.  8)

No sear needed for me, and I stop the IT @ 125, yes, I prefer rare.
