I thought this would be cool to show. This is how I make breaded pork loin sandwiches for the shop. First start with a center cut loin. Trim all fat and silver. Then portion it out to 1/4 pound each.Run through the tenderizer a few times.Then dipped in 1/2 whole milk 1/2 butter milk, breaded with a blend of cracker meal and repeat.Then fry till golden brown.Thanks for looking!

Perfect! Just the right size for the bun. I lived in Iowa for a few years - just like what I would get in the Amana Colonies. I'm hungry!

Butte, Montana has several restaurants that offer what they call pork chop sandwiches, which is essentially loin that is breaded and fried.  After having a few of those, I can almost taste, and experience the tenderness of your loin sandwiches, Sandman.

The process looks great and I'm sure the outcome is spectacular

Very good post Sandman! Your pork sandwiches look great! About 50 yrs. ago my family started a drive-in restaurant. Everyone helped out in some way. It's claim to fame was the huge breaded pork tenderloin sandwiches that my dad would hand pound in our basement 3 or 4 nights a week when he got home from his regular job. My great uncle was always there to make sure dad's mug never went empty of the locally-brewed beer. Ah the good old days!
