Looks perfect Jack. You need to throw that smoker in the back of your Honda Element and bring it to the gathering.

Thanks guys, for the encouragement...that Old Country offsett is a great smoker...easy to maintain temps and smoke.

In all the excitement about the beef ribs, I forgot to mention the spare ribs that turned out along with the pig-on-a-stick (I make those now every time I trim spares to a St Louis style...don't throw away those rib tips)

I was perusing the meat market at Kroger and they had 'em right there...on sale for $1.99.  Since I hadn't cooked 'em before, I only got two packs.  One is in the freezer.  I'll be on the lookout for 'em everytime I go in there.  I had never seen such meaty beef ribs.  Figgered at that price they would be worth a try.

Glad I picked 'em up.

Whoa...It is getting deep enough now that I am having to roll up my britches.

It was JUST some beef ribs that happened to turn out...and ONLY because of the advice I had from L A and a few others here.  With all that coaching ANYBODY could have ribs like that.

As my Dad used to say, "two heads are better than one...even if one of 'em IS a goat head."  I never knew who he was referring to.
