Pork butt and spares smoking away on the Grill Dome...





Butt went on at noon... should be ready around 1800

Ribs went on at 1345... should be ready about the same time.

About 4 1/2 hours later...

The ribs are done to perfection and lightly brushed with a St. Louis-style sauce...



Butt still needs a bit more time. Probably another hour or so.

The butt finally reached the internal temperature where I wanted it... and the meat pulled back nicely from the blade bone...




Now it just needs to cool a bit before getting pulled and slathered with Piedmont-style sauce.
