Sometimes one just has to experiment on their own. Some of these sites get all technical and forget about eating. LOL!!

That's true...AND..that's why this forum is so popular - we are a diverse group who have come together to try to teach old people to cook (namely ME).

I've been—
     1.  Cold smoking
     2.  Searing in blazing cast iron for 45 seconds
     3.  SV cooking
     4.  Searing again for 30 seconds

The first sear softens when Sous Vided so the second sear is required to make it crisp again.

It's this post with smoking added.  We like the results but still do a lot of meat over charcoal.
