Pizza today...

It's a cool and cloudy day, perfect for pizza. I'm in the back yard tending the fire, which takes about 3 hours to develop for good pizza. All by myself with a glass of wine with no sounds other than nature. It doesn't get better than this.

We'll seasoned tamarack with some red fir to build heat.  :)

I never heard of Tamarack before, had to google it. We usually burn fir and alder in the wood stove for heat. Oak has become a protected species around here. Sorry for changing the topic :)

Wish I had hard woods easily and economically available, but not. My yard is full of fit and tamarack, so that's what I use. Not the best, but I let the wood burn to coals before we cook.

Nothing wrong with that, Alder is a great smoking wood and my favorite for food. Can't wait to see them pizza's and more pictures of that awesome pizza oven :)

The final results... very tasty

Nothing like a blowtorch to start a fire...

... 5 minutes later and the fire is roaring

Enjoying a bit of surfing as I tend the fire with a glass of wine

Bought these tiny cast iron cookie pans at Costco today - their recipe was no good, but the iron works fine.

Coals are now ready, pushed to the side and back

Today is pizza Marguerite day - simple but very flavorful.  We're using a mix of heirloom and store bought tomatoes, fresh mozzarella, and fresh basil from the garden.

Just going into the oven...

... the finished pizza - crisp crust, what I call "glassine" meaning that it is brittle as glass.  I love it that way.

Another pizza

... and to top it off, tomatoes Ahron into the oven for the night - those babies are going to be delicious tomorrow when we're doing SRG chickens and baked 'taters.

Those pizzas really dynamite! Nice job. Now you have the real pizza oven!

Tomorrow, I have the Sunday family dinner and we are planning on four pizzas. You led the way and we follow.

I'm still a novice, but am learning through trial and error (I haven't shown the burnt pizzas, and believe me, there are as many burnt ones as good ones  ;D )

Topped off the day with a couple of loaves of thyme bread.  Rosemary finishing salt was sprinkled on the loaves
