Well, next week the opportunities for smoking meat and cooking a variety of dishes is going to be delayed for a while. So my wife and decided that the best thing to do would be to make a pork butt and a brisket, divide the meat into serving sizes for two, vacuum seal the packages, and freeze them for future use. So, yesterday, I put a pork butt on the pellet smoker and left it alone until I had to foil and then remove as it was done. I put it on at 2:00 PM and it finished at 2:17 AM for a 12 hour cook.
The pellet smoker is so easy to set up and use. Once the food is placed in the pellet smoker, I went back to my recliner, turned on another football game, took a nap, made dinner on the Weber, and relaxed until I had to foil the pork butt which was around 9:30 PM. Then, I just watched TV, browsed LTBBQ and removed the Pork Butt when the alarm went off on the Maverick when the internal temperature hit 205.

Today, it's pizza for the family dinner.
