Ice Marinated Chicken Breasts

Sept 23 2013

My wife bought some of the new Ice flavored sparkling water to try. A sausage I made called for sparkling water so I thought why not try it with some chicken breasts. I bought two bone in and skin on breasts. I used the lemon lime flavor.

I poured a little out in a glass and added a teaspoon of baking soda to it. I used most of two 17 oz. bottles to cover the breast, and added the baking soda mix. It was in the fridge for five hours and then air dried in the fridge a half hour before cooking.

While the chicken was on I cooked some Zatarains yellow rice in my rice cooker. I had added some sliced carrot and celery to it. I made a Romaine salad with blue cheese dressing.

I did the chicken, seasoned with some Penzey’s Old World seasoning on my Traeger preheated to 300 deg. It took one hour 10 minutes to get to an IT of 170 deg.

The chicken was great, moist and tender. The lemon lime flavor was very feint so next time I will add some lime slices and I would like to try to marinate overnight. I didn’t have time today and I am using the leftovers to take lunch to my wife tomorrow. The food at the nursing home is pretty good but she wanted some of my cooking for a change.

Great idea, Don.  I have some of the ICE products around here.  Some interesting flavor combination s to try.  I think I'll try this, only I'll use my marinating machine.

Squirt I think the use is so old none of us know about it, even me at 71!!! Besides it's many other uses baking soda is a meat tenderizer. After some sausage called for it I looked it up. Not sure about how much to use, the sausage was for 3.5 lbs and called for 1 teaspoon. Not positive it worked on the chicken but it was tender. Don

Great idea, Don. My kids and I like the Ice drinks I'm going to give this a try. There are several flavors. so plenty to experiment with. Thanks for the tip on adding some additional flavor with the lime, I'll keep that in mind for other flavors as well. Great looking meal!
