Beef Ribs on the Grid Iron

2 small slabs of beef ribs were seasoned yesterday with some of tee’s M3 test mixture.  Put in the
refrigerator until around noon today.  I seasoned them with a little Montreal steak and then put them
onto the Grid Iron over a pan of beef stock, onions, garlic, Franks Hot and Worcestershire.  I am using
Lumberjack OHC and in the tube is some mesquite.  Smoking at a temperature of 225.

3 hours into the cook. To wrap or not wrap? Not going to wrap today and see how they come out. I have
been spraying them with a mixture of beef broth, white grape, Worcestershire and some Franks every
45 minutes. 

6 hours in and almost there!  Kicked up the Grid Iron to 300 to finish.

30 more minutes and they were probe tender.

Sliced after a few minutes rest.

Plated with some homemade potato salad.

Ribs had great bark, were super tender and delicious! Potato salad went well with the ribs.

As much as I love pork spareribs, I have to say I love beef ribs best.

Mike, those are HUGE...the ones we found were missin' a lot of meat.  Where did you get those?

Looks like you have that Grid Iron dialed in.

I'm STILL wonderin' who is eatin' all that food you cook...and, how far is Hinesville from here?
