Black Iron Game Hens

A couple of 2.5 pound game hens, one seasoned with Mo Rockin and the other with Tony Chachere’s
Original Cajun.  Put back into the refrigerator to marinate in the rub for the next few hours.

I have cooked plenty of chicken in the black iron skillet but never game hens, so since it was
raining today I decided to use the Weber Performer and cook them in the skillet.  I put some
garlic and onion in the pan with the hens.  Garlic and onion were seasoned with W.O.W.

Put onto the Performer, using Stubbs charcoal and a couple of small chunks of pecan.

I did mention it was raining, right?

Pot of Bush Smokehouse Tradition beans topped with some cooked bacon getting ready to hit the grill.

Hens and beans are done.  1.5 hours at 300 to get the hens to 165 internal.

Plated with some leftover potato salad.

Delicious Sunday dinner.  The garlic did not overpower the hens as I thought it would.  Anyway will be
slowing down on my cooking this next week since I got a call late last night to come back to work.  I
guess they finally figured our positions were essential!  :-X  It gets dark way too early anymore, you
would think winter was upon us! ;)

I like and am impressed the way that you use the Weber Kettle as an outdoor cook stove. And, of course, the results are fantastic.

I love the black pan technique. And super results. I have never made game hens. Me thinks I need to change that.

Looks like several were cooking in the rain today - as long as the wind is not blosing, I really like cooking under cover in the rain.

Mike, ya gotta be more specific about that black pan cookin'.  I have a few of those skillets AND a kettle, but need to know how to put the two together.
The skillet didn't get hot enuff to blacken the birds?
Did you cook over direct heat?  Were the bottom vents closed?
Inquiring minds want to know...

I'm hatin' to see us go back to EST - dark at 6:00 pm is a bummer.

I cooked indirect for an hour and a half. I rotated the pan at the 45 minute mark so they would get an even cook. Nope no
burning at all. I still haven't figured that one out yet. Bottom vent (I only have one) was about half open and top vent open
all the way. This gave me a temp of around 300 degrees.  I was using regular Stubbs charcoal and not lump.  With lump
charcoal I can get the temp a lot higher and shorten the cooking time.

Yep I also hate the time change. Was cooking steak last night in the dark. :)
