New guy from Charlotte

Hey folks. I joined today and look forward to getting to know the group.

I've been smoking for 12 years or so, starting with a cheap SFB from Home Depot. About the time I started getting a handle on that smoker I got restless and started thinking, which is often where things go wrong. Anyway after a few years of playing with  electric units I realized that my food hadn't been nearly as good as when I used that first cheap smoker.

Anyway I've decided to go back to using real fire. But being basically lazy I don't want to lose the convince of dialing in a temp and watching from afar, so my next smoker will be a pellet burner. I haven't made a choice yet but have been reading all I could find about them here and elsewhere on the Internet.

So thanks for your help, and I'll be watching the threads.

I went to Charlotte a number of times (while living in the Burlington/Greensboro area) and just drove through on the way to and back from the Fall Gathering near Augusta GA.

Welcome to the forum, from NE Ohio.

Welcome from Texas.
If you want to cook using real fire AND not have to mess with it too much take a look at the pit barrel cooker.

Great to have to Bill!

We are fortunate to have both MAK and REC TEC as forum sponsors. THey have their own thread sections, and will be happy to handle any questions you may have about their products.
As well - you might want to ask questions via a thread in the General section - for user input about pellet grills.

Looking forward to your posts!

We're glad to have you here...especially with your years of experience to help the "Junior Cooks" like me.

I'm a "fire poker" so I have chosen the "high road" that leads to real wood and charcoal.  Pellet grills are so "set-it-and-forget-it" that they don't afford the opportunity to engage the fire and get smoke in your eyes.

Of course, I realize that most NORMAL folks like to sit and relax while they are cookin', but I guess I'm just the odd-man out - I've never been able to sit still for very long...sooooo...gimme some fire in a grill or smoker.  I'll be there checkin' and probing till the meats done or I am.

Anyway...WELCOME from middle Georgia.  Drop in to see us on your way south on I-75.
