Last Meal of Chicken and Ribs

Oldest daughter was home this week with her boyfriend, we had a great visit but unfortunately she is flying back later this evening.
When asked what they wanted for the last meal, Lindsey wanted chicken and Austin wanted ribs. So it was ribs rubbed with FS&B and chicken rubbed with Mo' Rockin', served with cheddar mashed potatoes and Israeli salad. A few FT's for the old man, to prevent dehydration of course, and then the good byes....  It's all of a sudden way too quiet around here.

I want that quite at my house.  the chicken and ribs look great.  nice color to both.  a great cook.   8)

Here's the salad recipe, courtesy of Serious Eats.  This is simple yet excellent!

                  Israeli Salad

2 Roma tomatoes, seeded and diced
1 English cuke, diced
1 red pepper, diced
1/2 med. red onion, diced
3 T finely minced fresh flat leaf (Italian) parsley
3 T olive oil
2 T fresh lemon juice
1 tsp oregano
Kosher salt, to taste  we used 1/4 tsp
fresh ground pepper, to taste, we used 3/4 tsp

In a large bowl, mix together tomatoes,cuke, red pepper, onion, and parsley.
Add oil, lemon juice, oregano,salt, and pepper.Toss to combine.  Serve immediately.
