Cilantro Smeared Pork Tenderloin
« Reply #-1 on: October 13, 2013, 06:45:06 PM »
This recipe is from Ray Lampe, Dr. BBQ, from his book Slow Fire. First off we decided to make some
homemade baked beans.  We cooked some white beans to just about done.  Then added some onion
and smoked bacon.  The sauce used is from Williams-Sonoma and is called Baked Bean Starter.  They
were phasing these out so my wife picked up several jars awhile back.

Put onto the Grid Iron to simmer for several hours.

2 pork tenderloins were marinated overnight in Wickers BBQ marinade.  This morning I removed all the
silver skin and the excess fat.  This was actually backwards since it should have been before I put them
in the marinade.  ;) The tenderloins were coated with the cilantro mix and refrigerated for about 5 hours.

Put onto the Grid Iron to get some smoke to start then will finish at a higher temperature.

Beans are done.

Tenderloins are done.

Plated with no veggies tonight.  We are counting the cilantro as a veggie!  8)

Nice easy and tasty Sunday dinner.

Never had tenderloin with cilantro, but I am more than willing to give that a try.

Looks fantastic!

What IT temp did the Tenderloins end up being?

Pulled them at 145 and rested about 15 minutes. They were definitely juicy and tender.
That is my normal pork, other than butt, pull temperature.

Interestingly people either love or hate cilantro - I love it while my brother hated it.

Beans (and most anything else slow cooked) tastes great when prepared in a Dutch oven.  Everything looks delicious, HOS - both dishes are things I would like to try

Thanks everyone. I am not a real fan of cilantro either and had my doubts about
how this would come out.  The cilantro really mellowed out and with the other ingredients
I could not really tell it was cilantro as it didn't have it's normal strong flavor.
