Leftover Pulled Pork Taco Bake

Here’s a great way to kill two birds with one recipe – so to speak!  First of all, we can always use more recipes for our leftover Pulled Pork.  Second, it’s another way of adding Mexican cuisine to your Low Carbohydrate life style.

   

Crust:  cream cheese, eggs, heavy cream, taco seasoning, and shredded cheddar cheese
Topping:  Pulled Pork, taco seasoning, tomato sauce, chopped green chilies, and shredded cheddar cheese
Serve with: shredded lettuce, guacamole, black olives, sour cream, salsa, and jalapeños

It is hard to believe that we can have so much pulled pork leftover  ;) That is a great way to get rid of it  8) 8)  Even the name sounds tasty.

That's a great idea - we love Mexican food, and pork is a great protein for use in most dishes.  I'm planning adobada (red pork) which consists of pork marinated and cooked in chili sauce - might be really good in your taco recipe  :P
