Best Tasting Ribs I Have Every Cooked.

ok, I know you know I like to cook ribs.  i probably cook 2-5 racks a week.  no joke.  i like ribs and putting together different flavor profiles.  i have tried different temps and time and everything when it comes to ribs.  i use to cook 26 racks every saturday and sunday for delivery at 10 am for a business. 











i made some money but not enough to be working 7 days a week.  i have 4 signature ribs i cook.  Sparky's Signature Ribs, Sparky's Sassy Ribs, Sparky's Wett Ribs and Sparky's Dry.  don't ask how i make them because i'm not going to tell ya.  i got my food handlers license, business license and did the whole shebang.  did a little catering on the side too.  it is not fun cooking for time.  i would suck at comp cooking.  i found out that making your passion into a job is not my cup of tea.  i did this routine for over 4 months.  so 52 sets of ribs per weekend for 4 months is around 832 and that is not counting the ones i cooked for myself.  so i believe in the 4 years that i have gotten into this very heavy i probably have cooked over 2000 racks of ribs.  rough guess more or less.  i like have a cocktail or a FT when i bbq.  bbq is suppose to be fun.  all the time.  so i quit cooking for ppl.  some old customers call for super bowl, new year and birthday ribs and i always cook for them if i'm not fishing. 

ok, so i cook a lot of ribs.  my family has eaten a lot of ribs.  they are my most critical eaters.  they know a good rib or too.  ya know when the gods look down on ya.  welp, this rib cook was like that.  everything was perfect.

my favorite part.  what is possibly better than melting butter.  i so love this part.

i'd put these up at any comp.  these babies are just beautiful.



oh ya, lets break out the secret ingredient.

i'll start w/ these 3.  everyone else can cut up there own.



nice color, good bite. 



these were the most flavorful ribs I have every cooked to date.  period!  family said so too.   8)

Ok so you have not completely given up on pellets 8)

Great looking ribs Sparky!

My best tasting ribs have been off of my Memphis. I think pellet grills do a fantastic job with ribs.

Same cook. Two full racks.  Ok maybe 3.  One on 69, kettle, and smoky mt.   Blind tast test.   Charcole won before.  Could those ribs have been even better?   

They look amazing.

Fabulous looking ribs, as usual.  Looks like you might be out go NC honey.  I'll have to see if I can fit some in my luggage next year when I fly west to my next Subvets convention in San Francisco.

We'll be home from our trip late Monday evening.  Lots to post about.

Hat's off to ya' Spark for doing so many ribs.  Every BBQ meat has its "characteristics" and ribs are the hardest to get to just the right point of doneness and then hold there.  In competition cooking my method is precise back-timing and I have a detailed plan of what happens at what time based on precise temperature control and the turn-in time. 

I love ribs and I love to cook them for both competition and for friends and family, but like you discovered "doing it for a living" would take all the fun out of it.

I love the color you got on the ones you posted this time.  Just wish I could smell 'em  8)
