First Smoke on the Offset in 3 Years

Three years ago my Double-Chef arrived & my first butt cooked was THE BEST I'd ever cooked!
I haven't fired up my New Braunfels as an indirect since.
The New Braunfels is a great charcoal grill so I've used , just not as a indirect smoker.
One of the members saw it in the background of a post & said if you don't love it send to me!
Cleaned out a few dirt Doppler nests & I'm firing it up
6 lb butt rubbed with TMB 's Rub ( another story)
Sitting on the deck listening to Pandora ( Fleetwood Mac) with the dogs & COOKING
Lonely butt on the smoker

I've got an old New Braunfels
The interesting thing is the firebox is under the left side of cooking chamber.
Using the charcoal pan as a diffuser the heat is directed to the far end of smoker.
Usually cooks pretty good but today!
Home alone , wife working, temp 70F not a cloud in site, light wind.
On deck, drinking a Guiness, listening to Fleetwood Mac, looked at my thermometers & it's never been this good?
Fire box side 225F far side 212F
Must be a perfect storm, temp, wind cooking in sun , who knows but who's complaining

Wife got off at 1pm, so I met for lunch, after that when got home it's at 5 hr mark & temp down to 210 F . Added 1 chunk wood & more charcoal.
8 hours in smoke , ready to finish in a pan, till temp 195F

Bet that pork butt pulled nice and easy!!
