Something Different

We have burn-out on turkey and chicken so,,,,,,, we are doing what Costco labels as Pork Rack Of Rib for our Thanksgiving day meal.

About 6#

Simple seasoning

Into the Bradley @ 220* with Hickory smoke.

After about three hours the IT was 142*, then FTC about a hour until time for dinner.

Left to right- SIL John, daughter Shannon, OH, my wife Beverly.

This was a hit.  Good smoke flavor, moist and tender.
