Mexican Scramble

Took some pork chorizo and cubed taters and grilled em up


Mixed em together then added some whipped eggs and when all cooked..stirred in some Taco cheese (colby and jack)
Got some leftovers for breakfast tomorrow.....
Got Smoke?

I love your breakfast meal.  If there are any leftover taters, I will dice them up and splash and egg or two over them.  If I have sausage or bacon handy, that goes into breakfast too.

Now That, is an outstanding breakfast.

In New Mexico, we add red or green chili to that or both just as a final touch served with a flour tortilla. Um.....good.

You cook the dish and I'll supply the red or green and the tortillas.

I love griddle and skillet cooking and dutch oven cooking. Makes for a nice change of pace from smoked grub and you still get to cook outside  :)
