Merry Christmas y'all!

Here's my today's Christmas menu:

We started with a lightly (just 15 minutes at 210°F) apple smoked beef tenderloin tatar, with a smoked eel sour cream, shrimps and some salmon caviar.













Second course was sea bass, grilled on flipped GrillGrates and seved with fennel risotto and pea puree.









Third course was venison loin that was reverse seared on my two ceramic grills. It was plated up with broccoli cream cheese, brussels sprouts, sweet potato mash and an shallot red wine confit.













Dessert was a homemade caramel parfait with S'mores from a cone, that were grilled for 10 minutes at 340°C.

you should be teaching us more.  your skills around fire are outstanding.  your platings.  works of art.  I need to come visit too.  love to be eating some of that wonderful stuff.  ya got milk right?   ;)
