Wolfe's "Gunpowder" pepper stout beef

I have tried this recipe before with varying degrees of success (Chuckies can be evil), and I think I have got it pegged. Only variation is using "Gunpowder Seasoning"..(Shout out to Tommy for turning me on to this great stuff!!)



Seasoned the chuckies with thick L&P Wooster and Gunpowder and into the fridge to sit all day before the long overnight cook!

Those chuckles should tenderize with the gunpowder and Wooster ;)

Well, I got a good nights sleep and it is now 6 a.m. Sunday and where are the chuckies....IN THE FRIDGE :o,  I forgot to put them in last night....I told you chuckies are evil  >:(

So I tossed some hickory and the chuckies in and set the smoker for 250....................

So after 6.5 hours in the smoker the chuckies are stalling at around 148 degrees internal so it is time to get the veggies chopped up.......... (those are sweet peppers in the little container..never had em before but I am today) 8)

Pulled the chuckies out with an internal temp at 150...layed em on the veggie-guiness-wooster medly and wrapped em up in foil in the oven for 2-2.5 hours at 350. The recipe states not to go off of temps now..when you can twirl a fork in em they are done and can be pulled and mixed into the veggies.........

Looking good Smoke......I am gonna do this one soon.....since I will not have a day off until next Sunday I guess that will have to be the day I try it
