Prosciutto wrapped pork tenderloin

My first cook for this new year: a pork tenderloin wrapped in air cured prosciutto, grilled indirectly on 400°F to an IT of 140°F. Plated with arugula salad and french fries.

Fantastic!!!!

When I looked at the 2nd picture - I thought you had the world's largest shrimp! :D :D :D

But - the idea of the prosciutto wrap on a tenderloin….very nice…..

That looks fantastic--especially the pink pork!   Just wish my wife would quit yipping when I cook pork to that color these days--she always has to cook it some more.   She worked for a neurosurgeon too long--too many people got trichinosis from eating pork from OLD Mexico.   Can't convince her domestic pork these days is safe, and much leaner.   Too easy to overcook and dry it out!
