Smoko de Mayo
« Reply #-1 on: May 07, 2012, 08:12:39 AM »
Various cooks going on this weekend..

Simpler dinner for Friday night.   Chicken/Apple brats.

It's time to start a pile of pulled pork care packages for the guy that is taking care of the barn/pasture/yard at MIL's house.

The usual flavor suspects..  ;)

And we've got 2 racks of meaty loin back ribs thawing in the fridge.   And a turkey boulder.

--

Butts before coffee..   :o

Ribs are up next..

--

Carolina Treet slather and a heavy dusting of Head Country.

I left the membrane on for now and will try to strip it towards the end of the cook.

Traeger is smoking around 250°, and the sentries are in place.

--

Ribs are coming along..

--

Done!   Wrapped and resting now..

--

Hot smoked some cod for 'fish tacos' for dinner Saturday night.   Just some cheap frozen cod and Goya/Sriracha.   ;D  Dang they were good..

After the flip.

About 40 minutes total at 285°.

Gonna do that again soon!

--

Smoke kept rolling Sunday..

Sorghum/Williams BBQ Turkey Boulder.

Schmear it up.

Almost there.

Done!

Wrapped and resting until it cooled down, then I pulled that netting off.

Fridge is stocked for the week!

It is on my list for the week! I have been traveling a lot lately and the Yoder is getting lonely. I do love this unit tho. It is a great tool on the deck! (Plus...it's is too heavy to chuck overboard if it ever mis-behaves ;D )
