Oh no I didn't! Oh yes I did!....Smoked Bacon Wrapped Tri-Tip

I pulled me another $1.99lb Tri-Tip out of the deep freeze. This one was rubbed with Sweet Heat seasoning before it was vacuum bagged and frozen.
Bacon and the tri-tip...
Bacon blanket laid out with 13 thread count :D
Now for some more Sweet Heat and brown sugar on the blanket...
The tri-tip on the blanket...
Wrapped in bacon and secured with silicone bands...
I decided to use the natural gas smoker because we were having thundershowers and the power was going in and out. It is modified with a modulating oven thermostat and I dialed it in at 225F...
Fired up the smoke daddy with cherry and hickory chips...
Nice smoke from the smoke daddy...
Now into the smoker...
I pulled it out of the smoker with a IT of 140F...
I put it in the oven at 425F for 10 minutes to crisp up the bacon...
On the board and ready to carve...
Carved up..
And plated with 5 cheese bread ;D

Look so good Muebe, bacon makes anything better and it is had to do better than a great tri-tip
