I tried something new (for me) :(
« Reply #-1 on: February 10, 2014, 07:25:18 PM »
Recently, I bought a burger basket with individual spaces for 4 burgers.  It also included a burger press than can be used to stuff things such as onions and cheese between two patties.  I stuffed the burgers with these items and placed it vertically in the cooking chamber.  The remote thermometer is programmed to cook hamburger to 160 degrees.  Big mistake, I ended up with overcooked burgers.  They tasted "OK" but I was disappointed with the cook.  Next time, I will pull the burgers at 150 degrees.  I have used  TBE about a dozen times since purchasing it in November, and this is the first  disappointment.  I know we learn by experience, so this is what I will consider this cook to be. I served the burgers with fresh frozen corn that we put up last summer and homemade potato salad.

This is why it's important to post what and how your doing it. Lots of great cooks (I'm not one yet) here that can hopefully help.

Good post thanks ;D

And don't let one less than spectacular cook get you down. It happens to all of us, and - it serves to remind us to really think the the cook ahead of time, and ....to be grateful for all of the good cooks we turn out ;)

I cook to IT of 160 to 165.  I use 73/27 or 80/20 beef for flavor but I never use 90/10 cause there is not enough flavor for Kimmie or me.

Not sure what happened to your cook

The burgers were 73/27 and cooked to 160 and they were hard and tough.  Next time I will cook just burgers with no onion/cheese stuffing.

Also mix in an egg or two into the meat before making the patties.

I wonder if the issue was that the burgers were stuffed. Essentially a stuffed burger is two thinner burgers around whatever is inside. The burgers could have reached set point before IT did.   Just thinking out loud.

I think that very well be the cause.

Two things:

First, be careful about Tommy's temps because he cooks for Kimmie and she thinks if a cooked meat doesn't look like charcoal it's raw.

Second, I find it important to keep a log of my cooks because my photographic mind ain't got no film in it and if I don't write it down I forget what I did.  I discussed this with the Turtle and he said it's a disease known as CRAFT...Can't Remember A Funny Thing (that ain't exactly what he told me but you get the idea,)  I thought it was a simple case of CRS..Can't Remember Stuff...but he said it was more serious than that.
