Spare Ribs for Sunday Dinner

Two racks of spare ribs, washed, trimmed with fresh orange juice and Mohunhen Butt Rub applied.


Sweetie vacuum packs the ribs to draw in the wet rub for during the overnight stay in the fridge.


Trimmings in the smoker to be added to tomorrow's Collard Greens and Beans.

At 7:00 it was time get the ribs in the smoker

Add some yellow mustard for bark and top off with additional rub.


Smoker is ready so in they go.


Using Rock's Stoker interfaced with the SSII to monitor and control the pit while we are at church and after church social time .


If anyone is interested what it looks like on the internet you can check the progress of the pit by typing 76.29.189.98 into your web browser.  If you do you should see a screen like below.
