Had a couple of my sisters and nieces over last night for dinner.  We had some good old pork steak, grilled veggies and some of the wife's great garlic mashed potatoes.  I smoked the pork steaks for an hour at 250 with some hickory.  Then I seared them on the hot grill.  After that they got sauced and back on the smoking grill for 15 minutes to caramelize, while the veggies got cooked on the hot grill.  It all came out great, used a rub recipe from the Weber app and Mauls sweet and mild sauce.

That is a lot of pork steak and I love pork steak.

It was good, not overpowering.  It was nice and light, but noticeable.  Pork steaks can be cooked a bunch of different ways.  This is the method that I like.  They come out real tender.  If I am short on time, I just direct grill them, like a regular steak.  They always come out tougher that way for me though.

After I had my first poke steak, I figured my pork chop days are over. Yours came out great. Gonna try your method next time I do em   8)
