I pulled out a Tri-Tip last night that was rubbed with Awake-a-Steak to throw on my new Memphis...



Fired up the Memphis with a setpoint of 200F(smoke mode)...



The Maverick grill temp reading was right in line with what the Memphis was showing as the actual temp...




Inserted the Memphis meat probe and the Maverick meat probe into the tri-tip...



Both readings were identical...



Then I put in the still partially frozen Tri-Tip and set the Memphis meat probe alarm point to 140F IT. So far getting some nice consistent smoke coming out the vents...



I have noticed that it is keeping temps within a few degrees and still producing smoke. Every time I go outside to check it is putting out a nice steady stream of light smoke. It is not bellowing smoke out but then again there are very little temp swings. The fan is mostly really low in speed. Then it will drop some pellets and ups the fan speed for a few seconds and drop back down. It appears to be doing a great job so far ;)

So after 2 hours at 200F I bumped up the setpoint to 270F until the IT of the Tri-Tip was 120F. That took another hour...



Then I cranked the Memphis up to 500F for 20 minutes to char the outside of the Tri-Tip. Man this baby can sear :o



I pulled her off when the IT was 135F....



And gave her a rest under a foil tent...



After the rest she was ready to carve ;)



The Tri-Tip turned out great. Tender with a great smokey flavor. Nice char on the outside. The rub I used is Instant Gourmet with coffee blended into it.

Ran the Memphis at 500F for ten minutes to clean the grill. The pellet consumption was much less than the PID controlled Traeger. I attribute this to the variable speed fan in smoke mode and the smart controller. It held even temps and produced enough smoke for my taste.

I am just loving this new pellet smoker  ;)

God that looks good. I finally found a store in Alabama that sells tri-tip but I am so intimidated by the ones I have seen on here that I am scared to tri one.
