There is a little Latin meat market behind where I work and they have Chicken Steaks. All the meat is trimmed off the chicken and is ready to grill. They will marinate for you if you want but I chose to do it myself.
I brined the chicken in Kosmo's Chicken Soak for -4- hours and added Kosmo's Dirty Bird rub just before grilling.
Ran the Quality Grill with all vents open and she ran around 325 for a nice relaxing slo grill with no flare ups...outrageous!!

Smoke - those look FANTASTIC!!!
And I gotta admit - I have not made these on the grill or smoker before.  I make them Cuban style, breaded and fried ( which is awesome)

BUT this looks like something that everyone would love.

What is the Kosmo's soak like? And the rub?

I'm picturing that being sliced up and put in a large tortilla with some avocado, cilantro, lime juice, and pico de gallo ;)

Yeah me too, it is all gone and that there taco idea sounds real good!! That little meat market carries home-made salsa's and guacamole  8)

All of the Latin markets in the SF Bay area carry that cut, and it is quite tasty. I like it for a crowd, as you can go hot & fast. flip-flip-done. Sour cream, tortillas, salsa = yum!
They also have a seasoning that I like that can be used in a number of ways. I mix it with orange or pineapple juce for a quick 30 minute soak.
