Mo' Rockin Beer Can Chicken

I got a whole foster farms chicken...



Liberally coated with Mo' Rockin Chicken Rub and put in the fridge for a few hours so the flavors can get happy...



Then I preheated the Memphis to 350F...



Setup the beer can chicken holder in the tray...



Sauce pan with spices and more rub...



Then add the can of beer and bring to a boil for 5 minutes...



Pour the beer back into the can 3/4 full while still hot...



Chicken on the beer can...



And then into the Memphis...

I like your use of herbed beer. Another thing I can recommend ( and it pairs well with the Mo-Rockin' rub ) is cinnamon sticks stabbed into orange quarters, then salted and dusted with some cracked black pepper - and shoved into the chicken cavity

Wow Tee never thought of using cinnamon sticks. I have done the oranges and lemons before.

What I have learned that makes a big difference with beer can chicken is heating the beer or liquid of your choosing right before putting it into the chicken and cooker. Otherwise all that energy is spent heating the beer or liquid. Then by the time the liquid is steaming the chicken has cooked enough internally that it will not take on very much flavor and instead will be releasing it's own juices back into the can.

This process helps to infuse the spices into the liquid and speeds up the cooking process of the chicken from the inside ;)

Also I chuckle at people who complain that the beer never steams because the level of the beer or liquid never drops. They need to realize that the can will fill back up from juices being released by the chicken.

The skin was delicious and not rubbery. The Mo' Rockin rub is just fantastic on chicken. And this is the most moist and delicious whole chicken I have made to date!

winner, winner chicken dinner.  ya baby.  that bird looks fantastic.  meat looks so moist.  skin.  oh my.  the color is just von da pu.  just a great bird.  nice job on polly the chicken.  the rub looks great on the bird.

I agree, that chicken should be used in a tv commercial - it looks that good. :)
