Ribs on the WSJ

I wanted to see how Ribs would come out cooked on the WSJ so that's what I did.

I loaded the grill with some bricks and wood chunks. Heated about 7-8 coals in the chimney. Put a piece of foil over the coals and added a small tin bowl with some water. The heat shield kept the temp under 210 for several hours. After the slow cook I removed the shield and added some Texas crutch for about 40 minutes and then finished them over direct heat. No sauce. The ribs were very meaty and delish. I don’t typically foil my ribs but I think it was needed cooking them this way.

Looks good!

I am a big fan of the foil with a 3-2-1 theme. I do admit that the time of use for each section depends on how the cook goes. The "1" can be a 10 minute sear or even nothing if they look done.

I usually serve the sauce as a side add on.

What is your normal way for rib cooks?

Same here, I bought the WSJ for the sole purpose of leaving it in my RV so that is one less item I need to pack up when I go on road trips.  So far the WSJ has not left my patio, except for the last road trip I took with it.  Great little grill for just the two of us and since I added the GrillGrates it has become my primary griller lately.
