My Dad used to say this little rhyme about peas:

That is a beautiful tri-tip.  I buy my tri-tip un-trimmed and do my own trimming.  I leave a fat cap as I believe it helps keep the meat moist.  That OldSmokey sure does a nice job, with your help of course.

Cuz, you've still got the touch on that Old Smokey. Love the look of that tri-tip. As always, it was cooked perfectly.
