I didn't notice any flavor change but I did see a bit more moisture in the meat after resting. It may have been a fluke but the meat did not dry out after slicing, which has happened from time to time in the past. I will have to try it a few more times before I can say if it works.

I have already mixed another rub with all the original ingredients but have added Turbinado sugar (raw sugar), paprika and a little cumin. I hope to try that mix on some whole chickens in the next few days.
