This is a classic dish in our region: Schwenker! Meat is from the pork's neck and cut in slices. Then they're seasoned with salt, pepper, paprika, thyme, oregano, allspice, mustard powder. These steaks get packed in a ziplock bag with lots of onion rings and six minced garlic cloves to marinade for two days. Today they were cooked over direct heat. The onions were heated in a aluminum pan, then later tossed on the grates over direct heat to give them a short sear, then put on the Schwenker.















These Schwenker were really tasty und absolutely tender!

After that I had some homemade chocolate cheesecake for dessert:
