Dry run on some PP

I have my daughters graduation party in a couple of weeks. So I wanted a practice cook on a 7 pound piece of shoulder I found in the freezer.

Injected it with apple juice, cider vinegar, watsa sauce, and rub.

Used mustard and molasses as glue. Covered in Sweet Money and JH pecan rub. Into the fridge for an overnight snooze.

Ran my Mak for 5 hours on smoke, with some Milt's in the tube.

Wrapped in foil with some juice, butter, and love ???

Total cook time was 8 hours.

Barkage wasn't very developed. But it was crazy moist and delicious.

Only a money shot ;D

And we didn't need no stinkin sauce

Dang Pappy that looks awesome, very moist looking ;

In my very limited experience if you foil it will reduce the bark. You said you getting ready for a larger cook. What about leaving 1 or 2 with out foil and that pulling and mixing the lot after? Might work :)

That is a home run, in anybody's book!!  Looks fantastic!  I'll be doing a couple of practice cooks over the next few days myself.  I have lots of neighbors that want to sample my PP.  I'm glad I have a bunch of vacuum bags available to package the samples.
