Tuesday Spares and Trisket

I trimmed a rack of spare ribs yesterday coated them with some EVOO and Three Little Pigs Touch of Cherry.  Wrapped and
put into the refrigerator.  The 2 pound tri tip was seasoned with some garlic powder and Oakridge BBQ Black Ops brisket rub.
Wrapped and put into the refrigerator. Both out of the refrigerator this morning and each given a little more of their respective rubs.


Put onto the Grid Iron at 180 degrees, using Cookin Pellets Perfect mix. I have Perfect mix in the 12 inch tube.  I will be smoking
at 180 for about 1.5 hours then bump up the temp to 225.


It took about 3 hours to get the internal temp of the tri tip to 145. At this time it was wrapped in foil and put back onto the smoker. 
Another 2.5 hours and it was done. Wrapped in towels and put in the microwave to hold.  I didn’t take pictures of this.

The ribs were wrapped after 3 hours and here they are after 1.5 hours in foil. 


Ribs are done!


Ribs and Trisket sliced up! Trisket was very moist, juicy and definitely tender.


Plated with some leftover Macaroni salad.


Dinner was excellent! Thanks muebe for all the details in previous posts about doing a Trisket. It works for us!

OMG!! My dream meal,but would add more of the salad too,it looks outrageously good!!

Mouthwatering ribs and trisket Mike! Beautiful plate with the salad too!  I haven't been able to pull the trigger on doing a trisket, the rare cooked tri tastes so good it's hard to keep the cook going!

Just a thought for your dietician: Trip is only 340 calories for 6 oz. And - well trimmed - it is low in fat and cholesterol as well. Maybe the best cut of beef in that respect.

Yep, did it on my Grid Iron. 180 for 1.5 hours then up to 225 until done.  It was actually 230 at grate level according to
my Maverick.
