Sparky's Buffalo Brisket
« Reply #-1 on: June 08, 2012, 11:59:03 AM »
this is a perfect example of what a great forum we have.  a few different members of our forum found out i have never had buffalo before.  so i got this.

this buffalo brisket is so lean.  it looks great.  welp, away we.

found a bottle of beef rub and something else.

you just can't cook buffalo unless your using your "Tatonka Dust".  so, on it goes.

pretty.

to help w/ moisture (thats what i was told to do.  i like the idea).

what a great picture.

see how i got the smoke to move from around the brisket.  thats good photography.  lol.

let it rest for 1/2 hour.  cut it up.  oh, very tasty.

put in back in tray.  1/2 cup of 4 men & pig spicy, 1/4 cup apple cv, 1/4 cup kids beer.  poured on top.  covered up real well and put back on mak.  turned grill off.  let the yumminess begin.

this is the 1st of two plates.

i just want to say thank you to both of my buffalo friends.  this was the best brisket i have every had in my life.  the whole family had 2nds.  it was good.

I have never had buffalo brisket Sparky. That looks great!

I got a place near me that sells buffalo meat so maybe they got one.

Another thing to put on my long list of cooks to try.

Great looking brisket Sparky, mouth watering!

We have a few briskets hanging out in our front yard, this was taken just a few minutes ago from our dining room window...

Sparky, I don't know which looks better; the brisket or the mashed potatoes with the gravy it made!

It is located in littlerock. Get off of pearblossom hwy and head east until it becomes hwy 138. When you get into littlerock it is on the leaf hand side. It is called " Charlie Brown Farms "

Rick knows where I am talking about ;)

I was gonna ask that same thing.  If it's like the buffalo I've had in the pasts I'd say no taste like a good but mild beef.

Great cook Sparky!

I love the Buffalo meat too! The only meat I would put on par with it..maybe better is Elk. But, since I can't get Elk here in the east....Buffalo is the best! ;)

Our neighbor's elk ranch is a mile from our house. Actually the buffalo fence and elk fence are side by side with enough room to drive a pickup in between the two. Over the years haven't had much elk meat from him, might have to hit him up for a brisket!
