Small chicken , in a simple brine for 6 hours .
Rinsed then dried & rubbed with butter & chicken rub.
Put  on a beer can chicken holder without the beer can because I want the juices to drain.
Put in a 12 in skillet filled with veggies , sweet purple onion, carrots potatoes & corn on the cob seasoned with a little oil & seasoning salt. .
On the Acorn for a little while on low then to 400F to crisp the skin.

Really good , bird done about 15 min before veggies.
Veggies flavored with chicken drippings were heavenly !

Thanks for the post, LA...looks mighty good.

As you may know, I am flying out to Houston with Albert today.  We are going to meet up with IR2DUM and Capt Jack and hit some of the BBQ highlights this week.
Today we'll go to KILLENS in Pearland to see how they're doing with their new pit.
Tomorrow, we will travel to Lockhart - BBQ MECCA - and how beef ribs and brisket are really supposed to taste.
Wednesday, we'll probably do a trip to Llano to try a little different style Q...
I am really thankful to be able to hang out with these guys.

I will be cooking a chicken like this when I get home.

You and Albert be careful and have a wonderful trip.  Don't eat too much Que.  Albert will have trouble taking off on the return trip.
