A couple of small packs of beef short ribs were seasoned with Simply Marvelous
Cherry rub and Penzeys California pepper.
I made up a batch of my Sweet Heat beans to go with the short ribs.
The short ribs were cold smoked for almost 2 hours with cherry wood in the tube smoker
then put on top of the Sweet Heat beans to cook. I am cooking at 225 with cherry pellets
and am using my Grid Iron.
Ribs at the 2 hour mark. Normally I don’t check but we were in the middle of a nasty thunderstorm
and once it passed I went out to make sure the smoker was still running okay.
I picked up some cob from a roadside vendor yesterday. I seasoned them with some olive oil
and garlic pepper.
Cob joined the ribs and beans.
Everything is done!
