I was here a couple hours ago and after seeing Jaxon all spralled out looking retired and content, well I was going to make a wise-ass comment. And then at that second, swear on it, this huge old catalpa tree across the street was struck by lightning!  Scared the bejezus out of me! So...taking this event into consideration,  I'm just going to say that your PP looks great and the idea of several flavors from the same butt is a great idea! Oh also I'd like to add, Jaxon  you look very dapper out there a'cooking! ;)

Jack, The Turtle was right on.  If you fix it and Deb eats it you've done as well as you can.

Here's a recipe for  a finishing sauce for pulled pork that I sometimes use.  It is good when the butt comes out well and also good to salvage a dry one as you had.

1 c cider vinegar
2 T brown sugar
1 tsp Tony C's Cajun Seasoning
1 tsp coarse ground black pepper
1 tsp red pepper flakes

Warm vinegar enough so that the sugar dissolves then add the rest of the stuff.
 Squirt over warm pulled pork and then mix.
I like to put it into a plastic squirt bottle.

Talking about cooking in the heat Jaxson....The older I get the more I feel like that in the summer.I may be buying one of the sous vide machines and a blow torch for the summer . Crank the outside stuff back up in the fall. Those butts look good and I like the seasoning idea.

I know where you are coming from. My wife is from Dothan, AL too and I think it is probably the hottest place there is, maybe not temp wise but when you factor in the heat, humidity and never seeming to have a breeze, it is dadgum hot! I kid my wife that people in Dothan go to hell on vacation to cool off a little.
