Smoked Meatloaf

No real reason to post this except that every once in a while Mrs. S_B surprises me.  Found a pack of 73/27 ground in the "reduced for quick sale" bin at the store today, and she grabbed it to make meatloaf for dinner.  On the way home, I asked if I should throw it in the electric smoker so that we didn't have to put the oven on when it was 95 degrees outside.  She actually said "yes" as long as I just used wood chips and not my tube pellet smoker.  Everyone really enjoyed the kiss of smoke provided, and the all beef (she normally used a beef/pork mix) was a nice change of pace.  The moisture was off the charts cooked to 160 degrees.  That is one really nice thing about the electric... how moist of an environment it cooks in.  I was told that I needed to post the cook and include the melon in the picture as proof that I do eat healthy food occasionally.  Tinker (the cat) was not impressed.  It is a little bit different loaf that we like.  Mustard inside and out (no peppers, ketchup or anything else red/green), onions and breadcrumbs for the mix.

looks pretty good SB.  i love left over meatloaf sandwiches the next day.  one of my favorite sandwiches.

Never thought of a meatloaf on the smoker, sounds like a great idea!

Perfect lunch for a rainy day like today. I love a cold meatloaf sandwich.
