I used drumsticks. I am not sure what you mean by inside out. All I did was cut off the tendons, removed
the skin from the knuckles and pushed/pulled the skin down over the meat.

on wings you pull the meat down,then pull skin and it becomes inside out. Like this

I just used the foil to keep the bone from getting black during the cook. It's just a cosmetic thing
to me. Makes a better presentation IMHO. Doesn't affect the taste at all.  ;)

That's what I figured.  Watched the youtube vid with the inside out stuffed wing lolis also.  Wife is picking some legs and wings up today and we will give it a shot.

This recipe takes some skill and i'm obviously not there yet.    Tried it with wings and got impatient as I was butchering them.   Will try with legs soon.  They were ugly, but delicious!  Used butter and worchestershire glaze.
